Boule (Artisan Free-Form Loaf) - Living The GourmetI decided to start with the master artisan free-form loaf. So far this method lives up to its name. Basically, you make the master dough, let it rise for a couple of hours, then store it in the refrigerator for up to 14 days. When you want to bake bread, just take out the amount of dough needed for a particular recipe, shape it, let it rise and bake it. How easy is that?

This French loaf is soft inside with a light, golden crust on the outside — just the way good bread is supposed to be. Artisan Bread is a truly fabulous book for those interested in making their own bread as well as for artisans looking to develop their craft. The book opens with the most basic and standard bread you can make, the Boule, otherwise known as the Artisan Free-Form Loaf.

How to Shape a Bread in a Boule (round ball)
I was thrilled to find the best-selling book Artisan Bread in Five Minutes a Day: The Discovery That Revolutionizes Home Baking that taught busy people how to make great bread at home, with only five minutes of active preparation time. Now I am more thrilled to find out there is a second book , Healthy Bread in Five Minutes a Day due to ship Oct 27 whips up fabulous breads made with more whole grains, fruits and vegetables. The secret? Mix up a lightning-fast batch of moist no-knead dough, save it in your refrigerator, tear off portions over the next week or more, shape, and bake. And now you can make healthy bread your family will love. Actually it takes about 15 minutes to mix the recipe. The daily process takes only five- minutes of prep work to slice off a hunk of dough and shape it into a loaf.
Thank you all for making this new edition possible-our readers are where the new ideas come from. The slashes worked better this time. Just wondering, if I want to put 4 loaves in the oven at a time.
